 <note>ABSTRAK&#13;
Latar Belakang : Pangan merupakan sesuatu yang berasal dari sumber hayati dan air, baik yang diolah maupun yang tidak diolah, yang diperuntukkan sebagai makanan ataupun minuman bagi konsumsi manusia. Food And Agriculture Organization (FAO) mendefinisikan makanan jajanan sebagai makanan dan minuman yang disajikan dalam wadah atau sarana penjualan. Boraks mememang berguna jika digunakan sesuai fungsinya, tetapi menjadi sangat berbahaya bila digunakan dalam pembuatan pangan. Data yang dihimpun oleh BPOM pada tahun 2010 bahwa bahan makanan yang menduduki peringkat teratas mengandung formalin dan boraks adalah ikan laut, mie basah, tahu, bakso, dan siomay. Hal ini yang mendasari Penulis melakukan penelitian untuk mengidentifikasi kandungan boraks pada jajanan siomay di sekitar jalan Balaikota Lapangan Vatulemo Palu.&#13;
Tujuan : untuk mengidentifikasi kandungan boraks pada jajanan siomay di jalan balai kota lapangan vatulemo kota palu tahun 2017&#13;
Metode Penelitian : Jenis Penelitian ini adalah penelitian dengan studi observasional deskriptif, pengambilan sampel dilakukan secara total sampling, jumlah sampel yaitu sebanyak 13 pedagang siomay berdasarkan kriteria inklusi dan eksklusi. Data yang diperoleh dari pengamatan dan pemeriksaan laboraturium akan diolah dan dianalis dengan menggunakan metode observasi deskriptif.&#13;
Hasil Penelitian : Pada 13 sampel jajanan siomay dilakukan uji nyala dan didapatkan hasil semua sampel negative yang berarti tidak terdapat boraks pada jajanan siomay.&#13;
Kesimpulan : Tidak terdapat kandungan boraks pada semua sampel (13 sampel) yang dilakukan pengujian.&#13;

ABSTRACT&#13;
Background :Food is something which comes from biological and water sources, either processed or unprocessed, which is applied as foods or beverages for human consumption. Food and Agriculture Organization (FAO) defines that street food as foods and beverages is served in container or vehicle sales. Borax indeed useful if used based on its function, but it becomes very dangerous when used for food processing. Data was collected by BPOM in 2010 that food which is top rank contain formaldehyde and borax are sea fishes, wet noodles, tofu, meatballs and siomay. This is why author conduct a research to identify borax ingredient on siomay street food around Balai kota street, Field of Vatulemo Palu.&#13;
Objective :To identify borax ingredient on siomay street food at balai kota street, vatulemo field of palu city, year 2017.&#13;
Method : Type of researches which was used in this research is descriptive observational studies, sample was taken by using total sampling, the total number of sample was 13 siomay peddlers based on inclusion and exclusion criteria. Data obtained from observations and laboratory checks would be processed and analyzed by using descriptive observation.&#13;
Result:&#13;
In 13 samples of siomay street food were done testing and showed that all samples are negative. it means no borax on siomay street food.&#13;
Conclusion: There is no borax ingredient on all samples (13 samples) that were tested.&#13;
