ABSTRAK
Latar Belakang: Resiko terjadinya kontaminasi silang di rumah sakit jauh lebih besar karena banyaknya hidangan yang dimasak atau disiapkan secara bersamaan. Penyelenggaraan makanan yang kurang memenuhi syarat kesehatan (tidak saniter dan higienis) selain memperpanjang proses perawatan, juga dapat menyebabkan timbulnya infeksi silang atau infeksi nosokomial (infeksi yang didapatkan di rumah sakit), yang di antaranya dapat melalui makanan. Kebanyakan infeksi yang terjadi di rumah sakit lebih disebabkan oleh faktor eksternal, yaitu penyakit yang penyebarannya ke makanan atau ke alat makan.
Tujuan: Untuk mengidentifikasi variasi bakteri pada alat makan di RSUD Undata Palu.
Metode: Jenis penelitian yang dipakai adalah jenis penelitian kuantitatif dengan desain penelitian studi observasional deskriptif. Teknik pengambilan sampel menggunakan teknik Purposive Sampling, dengan jumlah sampel adalah 16 sampel. Data yang diperoleh dari pengamatan dan pemeriksaan laboratorium akan diolah dengan menggunakan metode observasi deskriptif.
Hasil: Hasil yang didapatkan dari 16 sampel terdapat pertumbuhan bakteri. Berdasarkan hasil uji biokimia didapatkan variasi bakteri dari 16 sampel yaitu 5 sampel untuk Serratia liqufacien (31,25%), 2 sampel untuk Staphylococcus Aureus (12,5%), 2 sampel untuk Pseudomonas Aeruginosa (12,5%), 2 sampel untuk Citrobacter Diversus (12,5%), 2 sampel untuk Proteus Peneri (12,5%), 2 sampel untuk Seratia Mercences (12,5%) dan 1 sampel untuk Seratia sp (6,25%).
Kesimpulan: Semua sampel yang didapatkan dari alat makan mengalami pertumbuhan bakteri.

IDENTIFICATION OF BACTERIA ON TABLEWARE AT NUTRITION DIVISION TERATAI PAVILLION UNDATA GENERAL REGION HOSPITAL PERIOD OF 2016

ABSTRACT
Background: The risk of cross contamination occurs at hospital is higher because a lot of food are cooked and served simultaneously. Food serving which does not meet the healthy requirements (Unsanitized and hygiene) beside extending the process of treatment also can cause cross infection or nosocomial infection (acquired infection from hospital) one of them is foodborne. Most of infection occur in hospital majorly caused by external factor and they are foodborne diseases and through the tableware.
Objective: The objective of this research was to identificate various bacteria in tableware at undata general region hospital
Method: The research design used was quantitative with descriptive observational study. Sampling technique used was purposive sampling , the sample were 16. The data obtained from observation and laboratory examination and will be processed using observational descriptive method.
Result: The result from 16 samples are experiencing bacterial growth. Based on biochemistry test, the obtained result are the variation of bacteria from 16 samples and they are 5 samples for Serratia liqufacien (31,25%), 2 samples for Staphylococcus Aureus (12,5%), 2 samples for Pseudomonas Aeruginosa (12,5%), 2 samples for Citrobacter Diversus (12,5%), 2 samples for Proteus Peneri (12,5%), 2 samples for Seratia Mercences (12,5%) dan 1 sample for Seratia sp (6,25%).
Conclussion: All of the samples obtained from the tableware are experiencing bacterial growth
