 <note>ABSTRACK&#13;
Background: Soybean milk is widely consumed by Indonesia people.Soybean milk&#13;
is one of soybean processed products that currently produced many home&#13;
industries. Soy milk proteins have an amino acid composition similar to cow’s&#13;
milk.Nevertheless,if the process of its making is not good,it can be contaminated&#13;
by Escherichia Coli.&#13;
Purpose: Describe the quality of soybean milk drink produced in Palu of Central&#13;
Sulawesi Province using parameter of Escherichia coli bacteria and identify the&#13;
presence of Escherichia Coli bacteria in soy milk in Palu of Central Sulawesi&#13;
Province.&#13;
Method: This study was descriptive observational study. With total sampling&#13;
technique, with 12 samples of soybean milk drink that obtained before, and after&#13;
production and also expired production based on inclusion and exclusion&#13;
criteria. Data from inspection and laboratory observation were processed and&#13;
analyzed by descriptive observation method.&#13;
Finding: the results there was no presence of Escherichia coli bacteria in 12&#13;
samples of soybean milk. beverages examined and observed negative results&#13;
obtained by the presence of Escherichia coli bacteria.&#13;
Conclusion: Quality of soybean milk drink produced in Palu of Central Sulawesi&#13;
Province, provisace is good and free based on the parameter presence of&#13;
Escherichia coli bacteria and there is no contamination of Escherichia Coli&#13;
bacteria.&#13;

ABSTRAK&#13;
Latar Belakang:Susu kedelai banyak di konsumsi masyarakat indonesia. salah&#13;
satu produk olahan susu kedelai yang saat ini banyak diproduksi industri rumah&#13;
tangga. Protein susu kedelai memiliki susunan asam amino yang hampir sama&#13;
dengan susu sapi. Namun apabila dalam proses pembuatannya tidak baik, maka&#13;
dapat terkontaminasi bakteri Escherichia Coli.&#13;
Tujuan: menggambarkan kualitas minumaan susu kedelai yang diproduksi di&#13;
Kota Palu Sulawesi Tengah ditinjau dari parameter bakteri Escherichia Coli dan&#13;
mengidentifikasi bakteri Escherichia Coli pada susu kedelai di Kota Palu&#13;
Sulawesi Tengah&#13;
Metode: Jenis penelitian adalah studi Observasional Deskriptif. Pengambilan&#13;
sampel secara Total Sampling, jumlah sampel 12 minuman susu kedelai&#13;
sebelum,sesudah dan kadaluarsa berdasarkan kriteria inklusi dan ekslusi. Data&#13;
dari pemeriksaan dan pengamataan Laboratorium diolah dan dianalisis dengan&#13;
metode Observasi Deskriptif.&#13;
Hasil: Hasil penelitian 12 sampel minuman susu kedelai tidak di temukan adnaya&#13;
adannya bakteri Escherichia Coli.&#13;
Kesimpulan:Kualitas minuman susu kedelai yang diproduksi di Kota Palu&#13;
Sulawesi Tengah, ditinjau dari parameter bakteri Escherichia coli dapat dikatakan&#13;
baik dan bebas dari bakteri Escherichia coli dan Tidak terdapat kontaminasi&#13;
bakteri Escherichia coli .&#13;
